What's for dinner?

Tonight was going to be a quick dinner night, we had heaps to do and my wife had a study partner coming over. I decided it would be pasta with my own special vego sauce.
Now I know pasta does not sound all that interesting but it's what you put in that makes it interesting.
I like to start with what ever I can find in the pantry, in the fridge and in the spice rack, our spice rack does not offer a massive selection but it does cover the basics.
So what I found tonight was the following:
2 bottles of pasta sauce which we keep in the fridge for just in case nights.
1 tub of tomato paste
2 tins of chopped and peeled Italian tomatoes
3 cloves of garlic crushed (you can add as much as you like)
2 tbsp olive oil
1 brown onion chopped
1/2 bunch of Italian parlsey
1/4 cup of black sliced olives (optional)
1 chili sliced finley with seeds
Salt and pepper to taste
what you need to do with all of this stuff:
Heat a large pot of water and bring to the boil, salt the water if desired, do not add oil, the reason you are not supposed to add oil to the pasta water is because the pasta sauce will not stick to the pasta when you combine it. When water is boiling cook pasta as per instructions on pack.
Heat a deep based pot, add the oil, add the onion and cook for about 5 minutes or until tender, add the garlic and chili, stir for a minute, add the pasta sauce and stir will, add the tomato paste and the chopped tomatoes, cook on high heat until the sauce starts to bubble, when it does reduce the heat and simmer for 15 minutes.
Add the parsley and olives, stir well, season with salt and pepper.
This meal is simple and easy to prepare if you have any additions you would like to add leave a comment cause I would love to try someone else's ideas.
