Vegetarian Risotto

Today has been an interesting day, I didn't end up going to work as we had some other appointments to go to, after last night's take away meal, I have decided to make my famous vegetarian risotto.
I am going to share with you a recipe I made up myself.
This is what you will need:
I pumpkin diced in 1cm cubes and then oven roasted for about an hour on 180 degrees C.
4 cups of hot vegetable stock
30 gms of butter
200gms of baby spinach leaves
1 brown onion
3 cloves of garlic (it's up to you how much you put in)
1 1/2 cups of peas (I used frozen ones)
2 packets of the instant Risotto rice
1/4 cup grated parmesan (optional)
Salt and Pepper
How you can make it:
Heat a large pot and melt the butter, add the onion and cook for about 5 minutes and then add the garlic, cook for 1 minute while stirring, add the pumpkin, when onion and pumpkin are coated with the melted butter add the rice, once all the rice has been stirred through and starts to shine, add 1 cup of stock.
(tip: make sure the stock is hot when you add it, this way it does not take as long for the rice to absorb it)
When all the liquid is absorbed add another cup of stock.
Repeat till all the stock is gone.
Add the peas, stir through for about 2 minutes, add the spinach leaves and stir for another 1 to 2 minutes. If desired, add the parmesan cheese in and stir so it melts through.
Season with salt and pepper to taste. Serve immediately.
This meal would serve 4, it is a good quick meal for a dinner party or as a winter warmer.
