I did some cooking yesterday, I sometimes make something on the weekend for the week, yesterday I made vegetable soup, it was a soup my Dad had made for us a little while ago and my wife liked it so much she took the recipe so I could make it.
It didn't turn out too bad, I was quite impressed and usually soup doesn't do it for me.
Don't get me wrong I don't hate soup, I used to love my Nannas homemade chicken soup, that was a taste sensation, even her tomato soup was awesome, homemade noodles and all. I miss my Nanna. I wonder what she would think knowing I am a vegetarian now, she has crossed over by the way.
Nanna used to make some great food, Nanna was from Poland too, so she made some great authentic Polish food all the time. Stuff that I can say but I couldn't spell out for you.
So anyway back to my vegetable soup.
Here is the recipe if you are interested:
Ingredients:
30g butter
1 large leek finely sliced
1 clove garlic crushed
2 parsnips chopped in 1.5cm cubes
1 medium piece of celery
2 large carrots chopped in 1.5cm cubes
3 potatoes chopped in 1.5cm cubes
2 turnips chopped in 1.5cm cubes
6 cups of vegetable stock
Method:
Melt butter and cook for 15 minutes until golden brown (do not cook it on high cause it might burn) add garlic and ginger and cook it while stirring for 1 minute. Add vegetables and stock to pot and bring to the boil. Reduce heat, simmer partially covered for 40 minutes, taste it and see if it needs any seasoning.
Serve with chunky sliced crusty bread.
